Resident Recipes: Watermelon Salad

As warmer weather is upon us, it’s time to beat the heat with refreshing recipes like this watermelon salad! Whether you are planning a summer brunch, enjoying lunch with family and friends, or bringing a dish to dinner, this recipe is simple and delicious.
Another plus, this recipe is a great source of healthy fats, keeping you full for longer and supporting heart health. With Vitamins C, A, B6, potassium, and magnesium, watermelon salad is an excellent healthy choice for older adults looking to combat dehydration and fight muscle loss. Calcium and Vitamin K also help maintain bone density so you can stay strong!
With only 5 steps, you can make a perfect salad to impress your guests! A refreshing watermelon salad is the perfect picnic or potluck dish on its own or paired with a glazed grilled chicken or crispy salmon bites for some extra protein! The melon is a lovely foil for the salty feta, spicy onion, and tart vinegar.
Ingredients:
- ½ small watermelon, about 5 pounds
- 1 medium Vidalia onion (or other sweet onion)
- ¼ cup red wine vinegar
- Salt and black pepper in a peppermill
- ½ cup extra virgin olive oil
- 2 tablespoons chopped fresh mint
- 4 ounces feta cheese, crumbled
- 6 whole sprigs mint, for garnish
How to make Watermelon Salad:
1. Cut the inner flesh from the melon and cut it into bite-sized pieces, removing and discarding the seeds as you go. Set aside.
2. Put the vinegar in a bowl and add a large pinch of salt, a few liberal grindings of pepper, and whisk until the salt is dissolved. Slowly whisk in the oil, a few drops at a time.
3. Stir in the chopped mint, taste and correct the seasonings and set aside.
4. Combine the melon, onion, and feta in a bowl, pour the dressing over them, and toss gently until they are coated and evenly mixed.
5. Garnish with the sprigs of mint or divide the salad among individual salad plates and garnish each serving. Serve and enjoy!
